PASTA

Our pasta is made only of water and durum wheat semolina.
The spaghetti, our product par excellence for over a Century, are known and appreciated all over Europe and since many years overseas too. Ternetta (similar to linguine) and vermicelli completes our selection of long-shaped pasta.
Since 2013 our assortment has been expanded with more types of short pasta and pastina for soup; reginette are the new entry in a limited edition for 2024 and wholemeal fusilli.
Our mill’s peculiar milling process of durum wheat (from Switzerland and Europe) and the bronze wire drawing result in a pleasantly rough, sometimes even stippled texture. This, together with a slow desiccation, makes for a top-quality pasta unique in taste.
The pizzoccheri, which combine two parts of buckwheat with one part of durum wheat, belong to Valposchiavo’s gastronomic culture. Buckwheat, which is equally ground at our mill, mostly comes from Switzerland.
We only use GMO-free, additive-free raw materials. Our pasta is “Fait sü in Valposchiavo” certified.
FLOURS AND SEMOLINA

Several bread-making flours from wheat and rye are ground in our mill and praised among many local bakers and confectioners, but also among private customers. Moreover, we produce corn flours, semolina and buckwheat flour.
So as to guarantee a superior quality, all our flours are additive-free. We only mill GMO-free raw materials .
